Elaina Yarbrough

President & Founder

Elaina is a Brevard County native, born and raised right here in Rockledge. She earned her Bachelors of Science at the University of Florida, then continued her education at Florida Gulf Coast University to earn a Master of Science in Occupational Therapy. She has been working as a pediatric occupational therapist since 2021. 
 

Elaina is excited to bring her expertise as an occupational therapist to create an inclusive and accessible place where adults with disabilities have access to meaningful and gainful employment.
 

Elaina lives in Merritt Island with her husband, Bryce, two cats, two dogs and five chickens! In her free time she enjoys rock climbing, camping, boating, and basically anything in nature.

Caraline Dalheim

Vice President & Founder

Caraline moved to Florida from New York when she was 3 years old and was raised in Brevard County. She attended Florida State University to earn a Master's Degree in Special Education. She spent 5 years teaching Special Education at her alma mater, Rockledge High School, and currently works as a Registered Behavior Technician throughout Brevard County. 
 

During her time in the school system, she saw the lack of supported vocational opportunites for her students post graduation. She also has seen the struggle her brother, David, has faced in securing and maintaining employment throughout his adult life. She looks forward to filling this gap by founding Okie Dokie Coffee Co!
 

Caraline lives in Rockledge with her husband, Cory, and their dog, Ollie. In her free time she enjoys reading, bird watching, playing video games with her husband and spending time with friends.

Thalia Romero

Secretary

Thalia was born and raised in Boston, then moved down to Florida in 2015, where she pursued a certification as an Occupational Therapy Assistant. While continuing to work as a COTA, she is attending classes at the University of Central Florida to earn a Bachelor of Science in Health Services Administration.

 

As Secretary of the Board, Thalia combines her COTA experience and her time coaching Special Olympics athletes to champion true inclusion. She believes in building spaces where every person—regardless of ability—feels welcomed, respected, and connected.

Thalia lives in Palm Bay with her fiance, Jorge, two step children and two dogs. In her free time she enjoys Crossfit, fashion, reading and spending time with her friends.

April Murray

Board Member

April is a Florida native who grew up in Melbourne Beach. She earned her Bachelor’s degree in Advertising and Public Relations from the University of Central Florida.

 

She is proud to contribute her skills in marketing and social media to support the vision of Okie Dokie Coffee Co in creating a space centered on inclusion and empowerment for individuals with disabilities on the Space Coast.

 

April lives in Suntree with her husband, Jeff, and they have two kids in college. In her free time, she is a self-proclaimed foodie with a passion for crafting, flowers, dance exercise, listening to music and enjoying cozy moments with her two dogs.

Kristin Wherry

Board Member

​Kristin is a Florida native who grew up in Titusville, spent many years in Miami, including attending and working at the University of Miami, and has now returned to Melbourne.

As a seasoned professional within Nonprofit and Education, she contributes experience in nonprofit governance, volunteer and community engagement, and philanthropy, as well as a passion for creating impact through storytelling and partnerships.

Our vision to provide meaningful and gainful employment for individuals with disabilities, spread joy through every cup of coffee, and create a welcoming community for all inspires Kristin to dive into the challenge of supporting the establishment of this coffee shop in Brevard County.

Kristin enjoys spending time with family and friends, being near our waterways and the ocean, traveling, volunteering, and hanging with her rescue pup.
